March 18, 2013 - Universal Technical Institute-Dallas Educator Misty Ross Helps Students On A Budget Eat Healthy

Misty Ross, Director of Employment and Student Services for Universal Technical Institute’s Dallas campus, understands firsthand how hard it is for students with financial struggles to eat healthy.

“Early in my career I was raising three children as a single mother and it was tough to find the money for food,” said Ross. “Because of my own personal experience, I started noticing that some of our students living on a tight budget were not able to buy the nutritious food they need to fuel them through their day,” said Ross.

In January, Ross started the Nutrition Nook, an area where students who have trouble finding the money to buy groceries can pick up an Energy Pack. Each Energy Pack contains $20 worth of food that will provide a student with three nutritious meals per day for seven days. It is free for students. All that is required for the student to purchase is milk and bread.

Instructions are included on how to combine the ingredients to cook dinner one night with leftovers for the next day’s lunch. In addition to a diverse selection of healthy ingredients, each Energy Pack includes a recipe book and handouts on budgeting and nutrition.

The Nutrition Nook is open to any student facing financial difficulties. Ross plans on continuing to grow the program throughout the year.
